What to Expect When Visiting Ceglie Messapica, Puglia, Italy
In a traditional Trulli-house in which we live you can experience a typical day of a farmer family and the activity of producing local cheese and contribute to the unique and special flavour of it. Come to learn how to do and to know about the traditional techniques to repeat it at home. In the south of Apulia everything plays a role to reach the special and tasty Apulian food: soil, sun, water but also wind, patience and love.
We will experience to be a farmer for one day, the most tasting and thrilling rule: making the cacioricotta cheese in our Trulli in the beautiful countryside of Ceglie Messapica. An occasion to know about the old traditions, handed down from generations on.
In Puglia we produce many different cheeses, mostly depending on the kind of milk (cows, goats, sheeps, oaks) but also on what animals feed. All elements that contributes to the varieties of cheeses and its particular taste, a unique flavour due to the particular soil, the “air” and the grass. During this 2 hours class we will produce different cheeses depending on season: the cacio ricotta cheese during winter time and pecorino and fresh ricotta cheese during summer time. At the end, we will also taste the just made cheese and many local dairy products.
Some tips about the history of cheese: the invention of cheese dates back to about six thousand years ago and Apulia became over time an important production center for the whole Southern Italy.
