The proposed activity is an interesting demonstration of the production of Sicilian ricotta in a charming farmhouse surrounded by nature not far from the historic centers of Piazza Armerina and Aidone. A mustachioed shepherd will show the various processes of the production of ricotta starting from the boiling of the milk from which he will first obtain the cheese and then, adding more milk, he will explain how the ricotta is produced by witnessing the slow double cooking process of the whey to obtain consistency classic that characterizes this dairy product. With attention to detail and patience, the various steps and the importance of the right ingredients will be illustrated. At the end of the demonstration, you will be invited to taste the delicious ricotta accompanied with hot bread (also prepared at home) and local red wine, all served in the eighteenth-century context of the farm.
