The “butteri”, from the Latin “butoros” or “ox goader”, is a shepherd on horseback typical of the Tuscan and Lazio Maremma. This experience will lead you to get to know the typical Maremma animals in the farm re-proposed as the traditional nineteenth-century Maremma animals, including a bull of almost 9 quintals, about fifteen Maremma cows, a dozen horses and donkeys from Mount Amiata, roe deer, wild boars. of Cinta Senese breed, buffaloes, pigs and much more. The last exercise, in the “Tondino”, was the grip with the lasso, which the Butteri used when they had to medicate the animals. At the end of the exhibition we proceed with the delicious dinner with typical dishes and wine of the Maremma area: encore of first courses (often an excellent tomato soup), meat and sausage freshly prepared on the grill, with side dish and final dessert.
