Together, we will explore the Piedmontese culinary tradition through a Tuscan lens, blending the techniques and flavors of two renowned Italian regions. We will prepare traditional tajarin, ravioli del plin, and the typical pici senesi, following authentic regional recipes. You will learn to make two distinct doughs: one with eggs for the Piedmontese pasta and one without eggs for the pici. Each preparation will be enriched by learning specific techniques, such as the delicate “plin” for the ravioli and the handmade method for the pici. The course will conclude with a seasonal dessert, completing the culinary experience with a sweet touch that reflects local tradition. A unique opportunity to discover the roots and secrets of two extraordinary culinary traditions, learning how to enhance fresh ingredients and create dishes that tell stories and flavors of authentic cuisine.

My name is Jessica, I will accompany you on a visit to the vineyards and cellar. We produce wine for passion, with respect for the environment and continuous search for quality without forgetting the poetry that wine contains. We want to offer our guests a full-immersion experience in the world of oenology, and tasting, with a sensory journey to discover the world of wine from cultivation to aging. You can take a panoramic walk with us in the vineyard, where depending on the season you can actively follow the different processes, to understand how the wine is born in the vineyard, and then continues its life in the cellar from alcoholic fermentation to aging in wood. The experience ends with the tasting of wines paired with local products selected by the best farms. I'm a professional truffle hunter from 3 generations in Alba. My grandfather after the 2nd world war was one of the first truffle hunters in Alba, he taught my father all the secrets about the precious "ipogean fungus" then my father taught it to me. I'm a dog trainer & actually I've got 3 great dogs: Isi, Palli & Lisa. I would like to teach "some' 'of my truffle hunting secrets to travelers. During the tour you will be helped by my friend Margherita. She's an official tourist guide with great passion for truffles and local traditions to translate every part of the hunting.

The target is to show you the differences in the type of soils, exposure of the vineyards, the varieties tha we grow here in this part of Piedmont in connection with the global warming of the last decades.
