Hi, I'm Giorgio, welcome to our ancient family vinegar factory. Together with my father Mario, President of the Consortium of Producers "Antiche Acetaie" and President of the Association of ABTM D.O.P. I share the passion for ABTM in all its facets, from production to the disclosure of its secrets. In the acetaia you can see numerous batteries including the one started by my great-grandfather Mario in 1905 still in production. We will also talk about other important batteries for my family such as those started by my grandfather Giorgio in the early 1950s in honor of the birth of his children. Thanks to our great passion for ABTM we have decided to open the doors of our house and welcome you to this magical world. See you in Modena!


Discovering the Balsamic Vinegar of Modena!


The experience takes place at Acetaia Malagoli Daniele. Daniele is Sofia's dad and at th age of 22 she decided to turn his hobby for Traditional Balsamic Vinegar of Modena into a business. The house is based in the emilian countryside, in the between of Modena and Bologna. What to expect? Well, first of all a warm welcome, but also a professional explanation – surrounded by ancient barrels – on the black gold of Modena. The Malagolis are always glad to welcome tourists at their family’s Acetaia and to share their knowledge and passion with them. This is an educational experience where you'll learn a lot about the traditions of Modena, but especially on authentic products and how to recognize them. You'll learn the differences between the IGP Balsamic Vinegar of Modena and the DOP Traditional Balsamic Vinegar of Modena. They sound similar, they both are good products, but they are at the same time, different products, born for different reasons and it means that they should be also used differently. Moreover, you'll understand how to recognize them on the market.


Cavedoni Balsamic Vinegar Tour: The Oldest in Modena


Leave Modena 45 minutes in advance the starting time 3pm by car or taxi. taxi from Bologna to our location (Acetaia Cavedoni) is around 70euros- from Modena to Acetaia Cavedoni is 45euros. we can reserve a taxi to get back to Modena or Bologna. The closer train station is Vignola 7km far from our location 15 minutes by taxi(20euros) but you have to reserve a taxi in advance because there are not taxi there. The tour starts with a tour of the vineyards around the company and you will see all the productions from the grapes to the final products. You will then taste 8 different balsamic vinegar from 5years to 100 years old. Welcome to the world of top quality balsamic vinegar. tasting of Parmigiano Reggiano, Prosciutto, Mortadella, Salame with a typical bread of this area. 1 Bottle of Lambrusco wine to be drink during the tasting.

Owner-Led Balsamic Vinegar Tour & Tasting in Vignola, Modena


Meet your host Mariangela at her family home and vinegar acetaia for a vinegar tour, tasting and food pairing. The vinegary is in Vignola, a town 20km from Modena center and 20 km from Bologna. Visiting this charming traditional vinegary in the province of Modena is a truly unique experience: you enter a world full of history, visit lofts and breathe in the delicate perfume of traditional vinegar. Mariangela, the owner herself will welcome you into the tasting room where you will hear about her family's story of vinegar production. Learn about how traditional balsamic vinegar and saba (a grape juice condiment) are made. Then walk up to the historic loft and get a glimpse into how vinegar is aged. Return to the tasting room for a vinegar and saba tasting as well as a food pairing with signature ingredients of the region – Parmigiana Reggiano cheese, Parma ham and bread, and seasonal fruit. Mariangela will gift you a bottle of the family’s saba and memories that will last a lifetime!

Secrets of Parmigiano Reggiano and Balsamic Vinegar


I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese. on this special tour you will be able to touch the newborn calves on our farm which happens almost every day. you will taste the original king of cheeses and many other local artisanal products such as real balsamic vinegar aged over 30 years and parma ham and lambrusco wine and at the end you will take home with you a piece of real Parmiginao Reggiano aged for 24 months included in this tour
